Lime and tequila baste

½ | cup | Fresh squeezed lime juice; (4 limes) |
2 | tablespoons | Tequila |
1 | Clove garlic; minced | |
¾ | teaspoon | TABASCO Pepper Sauce |
¼ | cup | Chopped fresh coriander |
L/2 c olive oil | ||
Salt and pepper to taste |
Directions
In small bowl, combine first 5 ingredients. Gradually add olive oil and stir after each addition. Use as marinade for fish and shellfish. Drizzle over grilled fish before serving. Makes approximately l cup.
