Ingredients

| ¼ | cup | Shallots or red onions, diced |
| 1 | teaspoon | Minced fresh red chili, seeds & ribs removed, depending upon desired hotness |
| ½ | cup | Fresh lime juice |
| ¼ | cup | Rice vinegar |
| Salt, to taste | ||
| Freshly ground black pepper, to taste | ||
| 2 | tablespoons | Fresh basil or cilantro leaves, chopped |
| 1 | teaspoon | Fresh chives, snipped |
Directions
Mix all the ingredients together and use within 1 to 2 hours. Serve alongside grilled snapper for generous spooning on top. Yield: 1 cup.
