Lemon vegetables

Measure Ingredient
3 \N Carrots; sliced
6 smalls New potatoes; sliced
1 \N Zucchini; sliced
3 \N Yellow squash; sliced
½ cup Butter; melted
1 tablespoon Lemon zest; (yellow part of
\N \N ; peel)
4 tablespoons Lemon juice
¼ teaspoon Salt
¼ teaspoon Pepper

Steam carrots and potatoes for 5 minutes. Add zucchini and squash; steam 3 minutes more or until crisp tender. Place vegetables in serving bowl.

Combine butter and remaining ingredients. Pour over vegetables and toss.

Yield: 6 to 8 servings.
