Lemon filbert logs

Yield: 40 Servings

Measure Ingredient
1 cup Butter
¾ cup Brown sugar
1 teaspoon Lemon rind, grated
2½ cup Flour
¼ teaspoon Salt
1 tablespoon Lemon juice
1 \N Egg white
1 tablespoon Water
1 cup Filbert nuts, finely chopped

Cream butter, sugar and lemon rind until fluffy. Sift together and add flour, salt and lemon juice. Mix well and chill several hours. Shape into logs and roll in beaten egg white or egg yolk mixed with water and then finely chopped filbert nuts.
