Lemon-filled cookies

¾ | cup | Softened butter |
½ | Sugar | |
1 | Egg yolk; beaten | |
1 | teaspoon | Vanilla |
1 | pinch | Salt |
2 | cups | Flour |
Grated nuts for top | ||
¾ | teaspoon | Orange rind |
3 | tablespoons | Softened butter |
1½ | cup | Confectioner's sugar |
1½ | tablespoon | Lemon juice |
Combine first 6 ingredients. Form in 4 small rolls and chill. Slice thin.
Sprinkle with nuts. Bake at 400 about 7 minutes, until light brown. Combine rind, butter, sugar and juice. Place small amount between 2 cookies. Press together gently.
