Lehighton's carrot cake

Measure Ingredient
2 cups Sugar
1½ cup Oil
4 \N Eggs
8 ounces Cream cheese
2 teaspoons Vanilla
¼ cup Butter or margarine
1 cup Confectioner's sugar
1 cup Nuts


Notes By Karen Schleicher, Lehighton. The Times News, PA Mix above mixture and add 3 cups grated carrots. Mix 2 cups of sifted flour, 2 tsp. baking soda, 2 tsp. cinnamon, 1 tsp. salt. Add to mixture.

Place in greased pan. Bake 30 minutes at 350€.

ICING: Mix together. Spread on cake when cool.
