Lamb steak calypso

Yield: 4 Servings

Measure Ingredient
1 cup Chicken stock
½ cup Brown sugar
1 teaspoon Grated fresh ginger
1 \N Clove garlic, minced
½ teaspoon Ground cloves
2 tablespoons Fresh lime juice
2 tablespoons Rum (optional)
2 \N Lamb center leg steaks
\N \N (about 1 1/2 pounds)

Combine in small flat container all ingredients except steaks to make marinade. Place steaks in marinade and let stand, refrigerated, 2 to 24 hours. Remove from marinade and grill steaks over medium coals 5 to 7 minutes per side or until steaks reach desired doneness. Discard marinade.

Makes 4 servings.
