|1 cup||Bulgar (cracked wheat)|
|1 cup||Minced parsley|
|¼ cup||Chopped mint|
|2 \N||Scallion sliced|
|1 medium||Tomato seeded and chop|
|⅓ cup||Olive oil|
|⅓ cup||Lemon juice|
|3 ounces||Feta cheese crumbled|
|1 \N||Minced garlic clove|
|1 teaspoon||Dried oregano|
|1½ pounds||Very lean ground lamb|
In a 2 quart casserole, combine cracked wheat and 2 cup boiling water. Let stand 40-45 minutes until water is absorbed. Stir in next 6 ingredients.
Cover and chill 3 hours. Prepare grill as manufacturer directs. In small bowl, mix feta cheese, garlic and oregano. Shape lamb into 12 burgers.
Press about 2 teaspoon cheese mixture into center of each burger, pinching lamb to cover opening. Place burgers on grill over medium hot coals; cook 12-15 minutes, turning once. Serve with tabouli.
