Karen butler's banana bread

Yield: 4 servings

Measure Ingredient
½ cup Vegetable oil
1 cup Sugar
2 Eggs
1 cup Mashed ripe bananas
1 teaspoon Lemon juice
2 cups Sifted flour
3 tablespoons Baking powder
½ teaspoon Salt
OPTIONAL:
½ cup Chocolate chips
½ cup Raisins
½ cup Nuts

1. Cream oil & sugar. 2 Beat eggs until light and add to the oil & sugar 3. Mash bananas & add lemon juice. Blend with creamed mixture 4. Sift Flour, baking powder and salt and mix into banana mixture. Add chips, nuts, raisins. 5. Bake in greased 9X5X3 loaf pan at 375 degrees for 1¼ hours. Makes 1 loaf.
