Yield: 4 Servings
|6 eaches||Cloves Elephant Garlic|
|1 cup||Red bell pepper, chopped|
|1 each||Small onion, chopped|
|4 cups||Salad greens|
|½ cup||Cheese, cubed (mixed)|
|½ cup||Celery, diced|
|1 each||Can mandarin oranges|
|¼ cup||Radishes, sliced|
In a saute pan, pour in enough water to cover the garlic cloves.
Simmer for 10 minutes, drain and cool the cloves. Arrange the lettuce on a platter, toss together the veggies and cheese. Slice the cloves thin and toss in with the veggies. Top lettuce with the veggy mixture and oranges.
