Jessica's apricot chicken

Yield: 10 Servings

Measure Ingredient
2 \N Chickens; cut up
\N \N Flour
\N \N Beaten egg
\N \N Matzo meal
1 \N Jar apricot jam
1½ cup Duck sauce; or more jam
½ cup Ketchup
4 tablespoons Brown sugar; or honey
4 tablespoons Vinegar
\N \N Mushrooms; optional

Coat chicken pieces in flour, dip in egg, roll in matzo meal. Bake 30 min.

at 350F. Bring remaining ings. to a boil and pour over chicken. Bake 1 hour at 350F and one hour at 300 F. Mushrooms may be added for the second hour.
