Apricot (or peach) chicken

Ingredients

2Whole chickens; cut into serving pieces
1tablespoonPrepared mustard; (either brown or dijon)
2teaspoonsSoy sauce
1Clove garlic; crushed
Pepper to taste
¼cupBrown sugar
2tablespoonsLemon juice
½cupApricot; (or peach) preserves
1poundsCanned apricots; (or peaches), drained and cut in half

Directions

Arrange chicken in roasting pan. Mix all ingredients except the canned fruit.] Pour mixture over the chicken. Bake for 1 hour or until chicken is done. Shortly before chicken is ready place fruit around chicken and return to oven.
