Jerked chicken skewers

Quantity Ingredient
1 \N Boneless chicken breast cut in half; (6 ounce)
2 tablespoons Wet jerk marinade
1 teaspoon Dry jerk seasoning
1 teaspoon Paul Prudhomme's Poultry Magic
2 \N Wooden skewers; soaked

Pound out chicken breast between sheets of plastic wrap until flattened.

Remove plastic wrap and marinate the chicken in a non-reactive bowl with the wet marinade for 1 hour, refrigerated.

Put the chicken halves on the skewers and season with the dry jerk seasoning and poultry magic. Grill or broil 3 minutes on each side.

Yield: 2 servings
