Yield: 2 Servings
|1 \N||Cucumber; peeled, seeded and chopped|
|3 tablespoons||Mint leaves & mint spigs; finely chopped|
|1½ cup||Apple juice or still cider|
|1 cup||Lemon sorbet|
|1 cup||Ice cubes|
Place the cucumber, mint, apple juice or cider, sorbet and ice in a blender, and blend until smooth. Garnish with mint, and serve. Yield: 2 16-ounce servings.
