Measure | Ingredient |

1 \N | Cucumber; peeled, seeded and chopped |
3 tablespoons | Mint leaves & mint spigs; finely chopped |
1½ cup | Apple juice or still cider |
1 cup | Lemon sorbet |
1 cup | Ice cubes |
Place the cucumber, mint, apple juice or cider, sorbet and ice in a blender, and blend until smooth. Garnish with mint, and serve. Yield: 2 16-ounce servings.
