Irish sweet bread

Yield: 2 loaves

Measure Ingredient
3 cups Sifted flour
¾ teaspoon Baking soda
¼ cup Sugar
1 Egg, unbeaten
1½ teaspoon Salt
½ cup Shortening
¼ cup Molasses
1½ cup Sour or butter milk
1½ cup Chopped currants
1½ cup Raisins, chopped
¼ cup Chopped citron or candied lemon peel

Preheat oven to 325F. Sift together flour, salt and soda. Cream together the shortening, sugar and molasses. Beat in the egg.

Alternately add the dry ingredients and sour/buttermilk. Sitr in the fruit. Pour the batter into 2 greased 8 x 4 x 2½ inch loaf pans and bake for 75 minutes. Source: Linda Fields, Cyberealm BBS Watertown NY 315-786-1120
