Indian sandwiches

Yield: 8 servings

Measure Ingredient
1¼ cup Fresh; soft cheese
\N \N ; (farmer, ricotta, pot, goat or cottage)
½ cup Plain lowfat yogurt
⅓ cup Thinly sliced carrots
1 small Tomato; seeded and diced
½ cup Diced green bell pepper
½ cup Thinly sliced cucumber
⅓ cup Mixed fresh herbs; (such as parsley,
\N \N ; basil, dill or mint)
1 tablespoon Candied ginger
½ teaspoon TABASCO brand Pepper Sauce
\N \N Salt to taste
4 \N Pita bread pockets or wheat tortillas; sliced in halves

In medium bowl, combine all ingredients. Serve in pita bread pockets or rolled in wheat tortillas. Makes 8 servings.
