Iced banana cream

Quantity Ingredient
2 Mashed large ripe (but not brown) bananas, totalling approx 400g
½ cup Caster sugar (superfine sugar)
2 tablespoons Lemon juice
1 carton (300ml) chilled cream; beaten thick

This recipe is one to honor Linda ("hvane"). An Australian recipe from The Terrace Times, Bicentennial Cookbook to take the heat out of the day.

Simple, attractive, delicious and refreshing. Sprinkle bananas with sugar and lemon juice. Fold into cream. Freeze, covered, in 6-8 small pots or 2 ice cream trays for at least 4 hours.
