Beat eggs and sugar; add flour, baking powder, butter and vanilla. Mix thoroughly. Pour into well greased muffin pan. Bake at 375 for 20-25 minutes. (A bit of nostalgia for those who may remember the old Hotel Peabody in Memphis, TN)
