Hot baked potato salad

| Vegetable oil | ||
| 8 | Bacon slices | |
| ½ | cup | Minced onions |
| 2 | teaspoons | Salt |
| ¼ | teaspoon | Pepper |
| 6 | tablespoons | Vinegar |
| 4 | teaspoons | Sugar |
| ½ | cup | Chopped green peppers. |
Directions
(from a Good Housekeeping cookbook) Preheat oven to 400 degrees. Rub potatoes with vegetable oil; bake 1 hour or until done. Meanwhile, fry bacon till crisp; drain; crumble. Measure bacon drippings, adding enough vegetable oil to make ⅔ cup. return to skillet; add onions, salt, pepper, vinegar & sugar; heat.
Cut thin slice from top of each baked potato; scoop out centers; blend them with vinegar mixture, green peppers, bacon. Stuff back into potato shells.
Makes 8 servings.
