Hot & sour stir-fried vegetables

1teaspoonGinger, grated
3eachesGarlic cloves, crushed
1smallRed onion, chopped
1cupCarrots, sliced thinly
1cupGreen beans, sliced
½cupGreen cabbage, cubed
1cupZucchini, thinly sliced
1teaspoonSalt
3teaspoonsSugar
1tablespoonSoy sauce
2tablespoonsLime juice
1eachCayenne pepper, sliced
2tablespoonsGreen onion, chopped
4tablespoonsCilantro, chopped

Directions

In a wok, heat the oil & fry the ginger, garlic & onion until soft.

Add the carrots & green beans & stir-fry for 2 minutes. Add the cabbage, zucchini, salt, sugar, soy sauce, lime juice & cayenne.

Stir-fry for another 2 minutes until all the vegetables are tender, but not overcooked. Garnish with green onion & cilantro.
