|1 cup||Hominy grits|
|3 tablespoons||Butter; (up TO 4)|
|Pepper to taste|
Bring water to boil and add salt.
Add grits, ¼ cup at a time, and stir constantly. When all the grits have been added, reduce heat and simmer covered for approximately 30-40 minutes, stirring grits occasionally to prevent sticking.
When all the water has been absorbed and the grits are done, add the sugar and butter and stir.
Serve the grits in a bowl, adding freshly ground pepper to taste and additional salt and butter if desired.
