Hell's hundred acres sweet potato fries

I got this from a Woman's Day article on Firemen who cook. As a side-note, the recipe's named for an area of NYC where there are often violent fires. Original recipe called for o*l, which I left out.
Heat oven to 400 F. Spray jelly-roll pan with nonstick spray, if desired.
Mix potatoes and seasonings in a bowl until well coated. Bake about 40 minutes until tender.
