Sweet potato oven fries

2 | mediums | Sweet potatoes - (1 1/4 to 1 1/2 lbs); scrubbed |
Nonstick vegetable oil spray | ||
Salt; to taste | ||

2 | tablespoons | Finely-chopped flat leaf parsley |
1 | teaspoon | Minced garlic |
1 | teaspoon | Freshly-grated lemon zest |
Freshly-ground black pepper; to taste |
Directions
Preheat the oven to 400 degrees. Cut the potatoes crosswise, ¼-inch thick. Spray a baking sheet with the nonstick vegetable oil spray and arrange the potatoes in one layer. Bake them in the preheated oven for 15 minutes, turn them over, and bake them for an additional 10 minutes or until just golden. Sprinkle them with the seasoning mix and serve. To make the seasoning mix, in a bowl, stir together the parsley, garlic, lemon zest, pepper and salt to taste. This recipe yields 4 servings.
