Health vegetable & liver soup

Ingredients

| ½ | pounds | Liver; chopped |
| 2 | tablespoons | Butter |
| 4 | smalls | Carrots; diced |
| ½ | cup | Celery; diced |
| 1 | large | Onion; thinly sliced |
| 2 | cups | Hot water |
| 1 | tablespoon | Sugar |
| 1 | cup | Fresh or frozen spinach; chopped |
| 1 | can | Tomatoes (20 oz) |
| Salt & pepper to taste | ||
Directions
Stir cook the liver in butter. Add remaining ingredients. Stir well. Cook covered (25 min in microwave). This soup freezes and reheats very well.
