Measure Ingredient
2 tablespoons Water
1 cup Cranberries -- chopped
1 cup Apple -- grated
½ cup Apple juice
1 tablespoon Lemon peel
2 \N Egg whites -- whipped
2 cups Unbleached flour
½ cup Granulated sugar
½ cup Brown sugar -- packed
½ cup Raisins
1 teaspoon Baking powder
½ teaspoon Baking soda
1 teaspoon Cinnamon
½ teaspoon Nutmeg

Preheat oven at 350. Prepare pan(s) with cooking spray and flour.

In a mixing bowl, combine water, cranberries, apple, apple juice, lemon peel, and egg whites. In another mixing bowl, combine flour, sugars, raisins, baking powder, baking soda, cinnamon, and nutmeg.

Mix wet ingredients with dry ingredients just until moistened. Pour batter into prepared pan(s). Bake for 20 minutes depending on pan size.
