Gourmet baked spinach

Yield: 3 servings

Measure Ingredient
2 tablespoons Finely chopped onion
3 tablespoons Butter
2 teaspoons Salt
3 tablespoons Flour
¼ teaspoon Pepper
⅛ teaspoon Nutmeg
2 cups Milk
2 packs Frozen chopped spinach
3 \N Hard cooked eggs, chop
½ cup Corn flake crumbs
½ cup Grated Cheddar cheese
2 tablespoons Butter, melted
\N \N Paprika

Cook spinach according to package and drain. Cook onions in butter until tender, but not brown. Stir in flour, salt, pepper and nutmeg.

Add milk gradually and cook, stirring constantly, until thickened and bubbly. Fold in spinach and eggs. Spread in buttered shallow 1½ quart baking dish. Combine corn flake crumbs with cheese and melted butter; spread evenly over spinach. Sprinkle with paprika. Bake at 375 degrees for 20 minutes or until lightly browned.
