Golden potato soup

Measure Ingredient
⅓ cup Finely chopped onion
2 tablespoons Oil
1 tablespoon Flour
1 teaspoon Salt
⅛ teaspoon Pepper
1 cup Water
1 cup Leftover mashed potatoes
2½ cup Milk
½ cup Grated cheddar cheese

Notes: By Nicholas J. Young, Tamaqua. The Times News, PA Saute onions in oil. Blend in flour, salt and pepper. Add water and boil 2 minutes, stirring constantly. Add potatoes, milk and cheese. Heat slowly until the cheese melts. Do not boil.
