Sweet potato soup

Yield: 6 servings

Measure Ingredient
1¼ pounds Sweet potato, diced, peeled
3 \N Carrots, chopped
1 large Celery stalk, chopped
1 \N Bay leaf
6 cups Water
2 tablespoons Lemon juice
1 teaspoon Hungarian sweet paprika

Put all vegetables with the bay leaf in a soup pot. Add water & bring to a boil. Simmer for about one hour. Stir occasionally.

Just befroe serving, add lemon juice & paprika. Remove bay leaf.
