|¼ cup||All-purpose flour|
|2 teaspoons||Baking powder|
|¼ teaspoon||Baking soda|
|2 \N||Eggs, beaten|
|2 tablespoons||Shortening, melted|
Combine cornmeal, flour, baking powder, soda, and salt; mix well. Add buttermilk and eggs, stirring just until dry ingredients are moistened. Stir shortening into batter. Heat well greased cast iron corn stick pans in a 400 degree oven for 3 minutes or until very hot.
Spoon batter into pans, filling two thirds full. Bake at 400 degrees for 25 minutes or until lightly browned.
