Turkey salad

Here's a novel way to use up your turkey leftovers... in a crunchy
Salad.
¼ cup Light sour cream
¼ cup Light mayonnaise
2 tablespoons Chopped fresh parsley
2 tablespoons Lemon juice
1 tablespoon Liquid honey
1 tablespoon Dijon mustard
¼ teaspoon Salt
pinch Pepper
2 eaches Tart apples, upeeled and cubed
2 eaches Stalks celery, chopped
2 cups Cubed cooked turkey
½ cup Chopped walnuts, toasted
Lettuce leaves

Directions

Blend sour cream, mayonnaise, parsley, lemon juice, honey, mustard, salt and pepper. Toss with apples, celery, turkey and half of the walnuts. Mound onto lettuce lined plates and sprinkle with remaining walnuts. Makes 4 servings. Origin: Canadian Living, December 1994.
