Gazpacho pasta salad

Yield: 6 Servings

Measure Ingredient
8 ounces Rotini, Twists or Spirals uncooked
4 mediums Ripe tomatoes peeled, seeded & chopped
½ cup Sliced green onions
½ cup Cucumber (peeled, seeded & chopped)
1 \N Garlic clove; minced
2 tablespoons Chopped cilantro; OR... Dried cilantro
2 tablespoons Olive oil
1 tablespoon Red or white wine vinegar
1 teaspoon Salt
\N \N Cayenne pepper to taste

Prepare pasta according to package directions; drain. Combine pasta with remaining ingredients. Cover and chill at least 1 hour.

Serves 6-8
