Gazpacho pasta salad

Ingredients

4mediumsRipe tomatoes peeled, seeded & chopped
½cupSliced green onions
½cupCucumber (peeled, seeded & chopped)
1Garlic clove; minced
2tablespoonsChopped cilantro; OR... Dried cilantro
2tablespoonsOlive oil
1tablespoonRed or white wine vinegar
1teaspoonSalt
Cayenne pepper to taste

Directions

Prepare pasta according to package directions; drain. Combine pasta with remaining ingredients. Cover and chill at least 1 hour.
