| ½ | cup | Uncooked instant rice |
| 1 | tablespoon | Fresh parsley -- chopped |
| ½ | teaspoon | Orange peel -- grated |
Directions
In a small bowl, combine onion, garlic, lemon juice, soy sauce, honey and ginger. Add chicken; cover and refrigerate for at least 1 hour.
In a small saucepan, bring chicken broth to a boil. Remove from the heat; stir in rice, parsley and orange peel. Cover and let stand for 5 minutes. Meanwhile, cook the chicken and marinade in a hot skillet until no longer pink. Serve over rice. Yield: 1 serving Recipe By : Taste of Home
