Fresh lime ice cream

1tablespoon+ 1 tsp grated lime zest
½cup+ 1 tbsp fresh lime juice
2cupsSugar, preferable superfine
pinchSalt
2cupsHeavy cream
2cupsMilk

Directions

Combine the zest, juice, sugar and salt. Stir to mix well.

Gradually add the cream and then the milk. Stir gently until sugar dissolves. Cover and refrigerate for at least 4 hours, or preferably overnight to allow the flavours to blend.
