Measure Ingredient
1 tablespoon Black peppercorns, heaped
2 teaspoons Whole cloves
2 teaspoons Nutmeg, freshly grated
1 teaspoon Ground ginger

Mix, then grind in a spice grinder or coffee mill, then re-mix. Store in an airtight container, keep in a cool place away from light.

Muchly used in French charcuterie and with slowly cooked meat and poultry dishes.
