Floy belle bowen's rhubarb pie

Yield: 6 servings

Measure Ingredient
3 cups Rhubarb, diced
1½ cup Sugar
1 \N Egg, slightly beaten
3 tablespoons Flour
\N \N Pinch salt
\N \N Pastry for 2 pie crust pie

Preheat oven to 400 degrees. Mix together all ingredients and place in pastry shell. Score top crust and place over Rhubarb mixture; flute edges. Bake 15 minutes at 400 degrees, then 1 hour at 350 degrees.
