250 | grams | Icing sugar; sifted (8oz) |
Grated rind and juice of 1 lemon | ||
125 | grams | Dried apricots; chopped (4oz) |
175 | grams | Desiccated coconut; (6oz) |
1 | Cadbury's '99' Flake family box |
Melt the Buttons in a fairly large bowl then mix in the condensed milk and icing sugar. Stir in the lemon rind, apricots and coconut with just enough lemon juice to make it pliable. Chop 6 Flake's into 3 even sized pieces then mould spoonfuls of the coconut mixture round each piece of Flake to form a ball. Make remainder in the same way. Crush about 5 more Flake's and roll the balls in this to give them a light coating. If it does not stick easily, add a drop more lemon juice to the mixture. Leave in the fridge to firm up completely but eat at room temperature to bring our the full flavour.
Cook's tip: It is easier to roll the mixture with damp hands so wash them a couple of times during the process.
