Filo pastry purses filled with marinated beef

Measure Ingredient
150 grams Lean beef; in strips (6oz)
3 \N Sheets filo pastry
50 millilitres Soy sauce; (2fl oz)
100 grams Mixed onion and garlic; (4oz)
2 tablespoons Olive oil
100 grams Crunchy vegetables; (mushrooms,
\N \N ; courgettes,
\N \N ; mangetout) (4oz)
2 tablespoons Fresh parsley
2 tablespoons Fresh coriander
2 tablespoons Butter; melted
100 grams Wild rice; (4oz)

Pre-heat the oven to 165øC/325øF/gas mark 3 Marinate the beef strips in soy sauce. Cook the onion and garlic in olive oil, and then flash fry the beef strips. Julienne your vegetables into strips and add to the beef along with the fresh herbs.

Butter the 3 sheets of filo pastry and place one on top of the other. Place the mixture in the centre of the pastry and gather the edges into a purse and seal with a little melted butter along the edges. Cook in the oven for 20 minutes.

Cook the wild rice in seasoned boiling water. Serve together with a sprig of basil.
