Fill-em-up family supper

Ingredients

1tablespoonVegetable or olive oil
2Mild Italian sausages, sliced into 1/2 inch pieces
1Green pepper, cored, seeded and cut into chunks
1mediumZucchini, sliced
2Garlic cloves, minced
1(19 oz.) can tomatoes, including juice
2cupsLong-grain rice
1(19 oz.) can black beans, rinsed and drained
1tablespoonChili powder
1Bay leaf
1teaspoonLeaf oregano
1teaspoonSalt
5Green onions, thinly sliced
½cupFinely chopped coriander (optional)

Directions

Heat oil in a large saucepan over medium heat. Add sausages, green pepper, zucchini and garlic and cook, stirring frequently, until sausage is no longer pink. Add tomatoes and juice, crushing tomatoes slightly with the back of a wooden spoon. Stir in rice, beans, 3½ cups water, chili powder, bay leaf, oregano and salt. Bring to a boil, reduce heat to low and simmer, covered, 25 minutes.

Stir in green onions. Cover and continue to simmer 5 to 10 more minutes or until all liquid is absorbed. Stir in coriander. Yield: 8 Typed in MMFormat by cjhartlin@... Source: Modern Woman Magazine.
