Fast sausage pizza

2 | Red onions; cut into wedges | |
1 | medium | Plain ciabatta loaf |
2 | tablespoons | Olive oil |
1 | Clove garlic; chopped | |
4 | tablespoons | Tomato puree |
2 | Tomatoes; sliced | |
1 | Green pepper; cored, deseeded and | |
; cut into chunks | ||
100 | grams | Cheddar cheese; grated (4oz) |
Salt and freshly ground black pepper | ||

TO GARNISH
1. Heat a pan until hot and cook the sausages for 10 minutes, turning occasionally until golden. Preheat a grill.
2. Remove the sausages from the pan and diagonally slice. Add the onions to the pan and cook for 5 minutes, stirring occasionally, until softened.
3. Cut the bread in half lengthways. Place under the grill uncut side up and grill until crisp. Remove from the heat. Turn the loaves over and drizzle over the oil. Scatter over the garlic. Spread over the tomato puree. Divide the onions, sausages and peppers between the pizzas. Scatter over the cheese and cook under the grill for 5-10minutes, until golden and bubbling.
4. Scatter over the basil and serve cut into pieces with a green mixed salad.
Cooks Tips Ciabatta is an Italian loaf that looks rather like a flat French stick. There are various flavours now available from most good supermarkets, such as olive and sundried tomato which add extra taste to this simple yet tasty pizza.
