Eva's zucchini bread

| 1 | cup | Vegetable oil |
| 2 | cups | Granulated sugar |
| 2 | cups | Shredded zucchini |
| 2 | teaspoons | Vanilla |
| 3 | cups | Flour |
| 1 | teaspoon | Baking soda |
| 1 | teaspoon | Salt |
| ½ | teaspoon | Baking powder |
| 1 | teaspoon | Cinnamon |
| ¾ | cup | Chopped walnuts |
| 1 | cup | Raisins (optional) |
Directions
Beat the eggs. Add the oil and sugar, and mix well. Preheat the oven to 325 F. Grease and flour 2 bread pans. Mix all dry ingredients together, and add sugar/egg/oil mixture to it. Fold in the zucchini and nuts (also raisins, if used) Bake 1½ hours.
