English eggs

2 | tablespoons | Unsalted butter |
1 | medium | Tomato, peeled, seeded, chopped |
2 | eaches | Green onions, thinly sliced |
4 | larges | Eggs |
Salt and pepper | ||
4 | ounces | Freshly grated sharp cheddar cheese, about 3/4 cup |
Melt 1 tbsp of the butter in a small skillet over high heat. Add the tomato and green onions and cook until onions have softened, about 3 minutes. Transfer to a bowl. Melt the remaining tbsp of butter in the same pan. Beat the eggs until well blended in a small bowl. Add salt and pepper to taste. Pour the egg into the hot butter, reduce heat to medium and scramble by folding gently-not stirring-until the eggs have set, about 3 minutes. Gently fold in the tomato mixture.
