|2 tablespoons||Unsalted butter|
|1 medium||Tomato, peeled, seeded, chopped|
|2 eaches||Green onions, thinly sliced|
|Salt and pepper|
|4 ounces||Freshly grated sharp cheddar cheese, about 3/4 cup|
Melt 1 tbsp of the butter in a small skillet over high heat. Add the tomato and green onions and cook until onions have softened, about 3 minutes. Transfer to a bowl. Melt the remaining tbsp of butter in the same pan. Beat the eggs until well blended in a small bowl. Add salt and pepper to taste. Pour the egg into the hot butter, reduce heat to medium and scramble by folding gently-not stirring-until the eggs have set, about 3 minutes. Gently fold in the tomato mixture.
