Eggs on savory bed

Yield: 1 Servings

Measure Ingredient
1 medium Onion, chopped
1 each Green pepper, minced
Buttered crumbs
6 eaches Eggs
3 tablespoons Butter or butter substitute
Salt and pepper

Brown onion and green pepper in butter. Pour into shallow, well-oiled baking dish. Break eggs. Place on top of mixture. Add seasonings.

Cover with crumbs. Place in pan of warm water. Bake in moderate oven (375 F) until eggs are firm. 6 servings. Elizabeth Shaffer, Albuquerque, N.M.
