Eggs in fried bread

One of the worst breakfasts I have ever eaten in my life was at the Salvation Army Hostel in Dublin, Ireland. I was a student and we traveled on very little money. The hostel offered "Rasher and Fried Bread." (Rasher is bacon.) It sounded good and it was cheap. Lord, it should have been. The bread was fried in old bacon fat that was so rancid we almost died.
Fried bread makes a delicious breakfast. When the boys were little I would serve them the following dish and we could create quite a game at the breakfast table. Channing called the dish "Eggs Looking at You." I hope your father made it for you when you were little.
Cut a hole about 2 inches in diameter in the center of each slice of bread. Butter the bread on both sides and pan-fry gently until brown on both sides. Crack an egg into each hole and cover the pan until the eggs are set.
