Double cheese and turkey potato pie

1 | cup | Fresh mushroom, sliced |
1 | small | Onion, chopped |
1 | tablespoon | Butter or margarine |
10 | eaches | Ounce can cream of mushroom soup |
2 | cups | Chopped cooked turkey |
1 | cup | Frozen mixed vegetables, thawed, drained |
½ | teaspoon | Black pepper |
1½ | cup | Grated cheddar cheese, divided |
3 | cups | Hot mashed potatoes |
4 | eaches | Single sliced cheese, cut into strips |
Directions
PREP TIME: 15 MINUTES
COOK TIME: 20 MINUTES
Combine mushrooms, onion and butter in 2 quart microwaveable casserole dish. Microwave on high for 2 minutes. Add soup, turkey, mixed vegetables, pepper and grated cheese to casserole. Microwave on high 5-6 minutes until mixture in hot. Spoon potatoes over turkey mixture.
