Dilled onions

2eachesPearl onions 1-lb jars drained
1cupSugar
2cupsCider vinegar
2teaspoonsRed pepper flakes
2teaspoonsCaraway seeds
24eachesBlack peppercorns
2teaspoonsSalt
4tablespoonsDill fresh and snipped fine

Directions

Place drained onions in to 2 each 1-qt jars. Combine the vinegar, sugar, herbs, salt, & spices in a sauce pan. Brinmg to aboil then pour over the onions. Seal jar tightly, cool to romm temparature.

Refrigerate for 2-4 weeks then you may open them to be served. Very good with vodka, beer, or as a compliment for a salad. Origin: Olena Meshenkova, L'viv-Ukraine, circa 1995
