|4||Med onions; peeled and quart|
|¼ cup||Chopped mushrooms|
|3||Tomatoes; peeled seeded chop|
|1||Clove garlic; mashed through|
|1 tablespoon||Minced celery leaves|
|¼ cup||Defatted chicken or vegetabl|
Toss all of the ingredients into a round, medium sized casserole dish and combine well. Cover and microwave on full power until the onions are just tender, about 5 minutes. Let the onions stand for 3 minutes before lifting the cover nd serving. The onions are even tastier when reheated and eaten the second day. Great as a side dish to turkey or roast pork.
