Dijon-crumbed chicken

| Breast halves | ||
| ½ | cup | Dijon mustard |
| 1 | cup | Whole-wheat bread crumbs |
| pinch | Cayenne to taste | |
| pinch | Black pepper, to taste | |
| Non-stick olive oil spray | ||
Directions
Preheat oven to 350ø.
Lightly spray a 7" x 10" glass baking dish with non-stick spray.
Combine bread crumbs, cayenne & pepper in a shallow bowl.
Liberally spread the chicken breast halves with dijon mustard. Dredge in seasoned bread crumbs on both sides. Place in a single layer in prepared baking dish. Spray the top of coated chicken with a little additional olive oil spray.
Place in the hot oven & bake for about 30 minutes, or until done.
