Deep fried mango parcels

Measure Ingredient
4 \N Thick slices white fresh bread
25 grams Unsalted butter
50 grams Diced mango
50 grams Self raising flour
25 grams Caster sugar
1 teaspoon Allspice
1 teaspoon Shredded mint
2½ \N Floz dry strong cider
\N \N Oil for deep frying
\N \N Mango coulis

Butter the slices of bread and divide the mango between two slices.

Sprinkle over the shredded mint.

Cover with the remaining two slices of bread and cut out the sandwich, creating a central mango dome.

Make the batter by mixing the flour and sugar, then add the cider whisking until the batter is thick. Heat the oil to 180C/350F, put in the batter.

Turn after 1-2 minutes.

Drain on kitchen paper dust with caster sugar and the allspice. Serve with a mango coulis.
