Curried egg sandwich

Ingredients

| 4 | Hard-cooked eggs; chopped | |
| ¼ | cup | Chopped pitted ripe olives | 
| 2 | tablespoons | Chopped green pepper | 
| ½ | teaspoon | Curry powder | 
| Salad dressing or mayonnaise | ||
| Salt & pepper to taste | ||
| 8 | slices | Whole wheat bread | 
| Lettuce | ||
Directions
Combine eggs, olives, green pepper, curry powder & enough salad dressing to moisten. Mix lightly & season to taste. For each sandwich, spread 2 bread slices with salad dressing & fill with egg salad & lettuce. Cut in half. 
Makes 4 sandwiches. (Variation: Add tomato slices & serve in toasted sesame seed buns or potato rolls.)
