4 \N | Hard-cooked eggs; chopped |
¼ cup | Chopped pitted ripe olives |
2 tablespoons | Chopped green pepper |
½ teaspoon | Curry powder |
\N \N | Salad dressing or mayonnaise |
\N \N | Salt & pepper to taste |
8 slices | Whole wheat bread |
\N \N | Lettuce |
Combine eggs, olives, green pepper, curry powder & enough salad dressing to moisten. Mix lightly & season to taste. For each sandwich, spread 2 bread slices with salad dressing & fill with egg salad & lettuce. Cut in half.
Makes 4 sandwiches. (Variation: Add tomato slices & serve in toasted sesame seed buns or potato rolls.)
