Cranberry sauce cake

Yield: 16 servings

Measure Ingredient
3 cups All-purpose flour
1½ cup Sugar -- 1 oz
1 cup Mayonnaise
1 can Cranberry sauce --
\N \N Whole-berry 16 oz
⅓ cup Orange juice
1 tablespoon Orange peel -- grated
1 teaspoon Baking soda
1 teaspoon Salt
1 teaspoon Orange extract
1 cup Walnuts -- chopped
\N \N Icing
1 cup Confectioner's sugar
2 tablespoons Orange juice

In a mixing bowl, combine flour, sugar, mayonnaise, cranberry sauce, orange juice and peel, baking soda, salt and extract; mix well. Fold in walnuts. Cut waxed or parchment paper to fit the bottom of a 10 inch tube pan. Spray the pan and paper with nonstick cooking spray.

Pour batter into paper-lined pan. Bake at 350 deg. for 60 to 70 min.

or until the cake tests done. Cool 10 minutes in pan before removing to a wire rack. Combine icing ingredients; drizzle over the warm cake. Yield: 12 to 16 servings. Recipe By : Taste Of Home
